Restaurants were expressions of the owner’s passion for food and love of people. Better yet, they were owned as much by the community as by the owner himself. Signature dishes, like chicken wings or steaks drew people back to an eating establishment and would breathe life into a restaurants’ aura. Unfortunately, the restaurant is a very different place today. Large corporations run restaurant chains, whose fiduciary is to their board of directors and stock holders. While they strive for consistency, profits are put ahead of quality.
